A classic Japanese comfort food, this gyudon recipe is a super simple and tasty beef rice bowl.
dashi

pickled red gingerHeat a large pan over medium heat. Add 150 ml dashi, 2 tbsp sake, 2 tbsp mirin, 2 tbsp soy sauce and 1/2 tsp kosher salt. Stir to combine.
Add 1/2 cup sliced brown onion to the pan in a single layer. Keep the broth at a simmer, and cook the onions for 2 to 3 minutes until softened and translucent.
Layer 200 g thinly sliced beef over the top of the onions and simmer until they are medium rare, about 1 minute.
Divide the cooked rice between the serving bowls, and layer the beef and onions over the top. Pour a few tablespoons of the leftover broth over the bowls to let the rice soak it up. Add toppings as desired and serve immediately.
